Tomato and Carrot Soup
Ingredients
10 medium tomatoes
4 medium carrots
1 onion
1 green chilli(optional)
1 Bay leaf
10 garlic cloves
few coriander leaves
A pinch black pepper
Red chilli to taste
salt to taste
A pinch of sugar
1 tsp butter
Cream and bread sticks for granishing
Method:
.Wash and cut tomatoes in four pieces.
.Wash, peel and cut carrots into thick slices.
.cut onion into four pieces
.In cooker add butter when it is going melt ,add bay leaf and garlic saute it .add onion cook for 2 minutes.Now add tomatoes and carrots cook for 2-3 minutes.add 2 cups of water and take 2 whistles.
.cool down and blend in a handblender(you can also use mixer for this process).
.Add water as required to make the blended mixture thin in consistency .
.In a deep pan add this mixture, leftover spices and sugar.bring to a boil and simmer about 10 minutes.
.Serve hot with bread sticks, fresh coriander leaves and fresh cream.
