Kaju Curry
Ingredients
1 cup Cashew nuts (Roasted)
2 medium size Onions (sliced)
2 medium size tomatoes (sliced)
1tbsp Oil
2tbsp butter
1tsp ginger garlic paste
1tsp garam masala powder
1tsp Kashmiri red chilli powder
1tsp turmeric powder
1tsp coriander powder
1tbsp fenugreek leaves (Kasuri methi)
1cup amul fresh cream/ fresh malai
Salt to taste
Chopped coriander leaves and few cashewnuts for garnishing
Method.
.heat oil in a pan, add onions saute it.now add tomatoes.cook for 2-3 minutes.
.cool the onions and tomatoes mixture.
.In a blender add 1/2 cup cashew nuts, the onions and tomatoes mixture and make a fine paste.
.heat butter in a pan add ginger garlic paste and saute well.
.add onion tomato puree, salt and remaining spices. Stir until butter separates itself from the mixture.
.now add water. When it starts simmering, reduce the flame and let the paste thicken.
.now add the fresh cream and bring to boil.add the remaining cashew nuts, mix well and turn off the flame.
.sprinkle some freshly chopped coriander leaves and add few cashewsnuts on the top.
.serve with chapati, naan, Paratha, bread or rice.
